Baked Butternut Squash and Acorn Squash

My neighbor Jack gave me a beautiful acorn squash and a butternut squash from his garden. We had guests for dinner so I made both and they were a big hit. My mom used to make this baked squash for us when I was growing up. I love the spice from the nutmeg and cinnamon, the salty from the butter, and the sweet from the brown sugar. It's a decadent way of making squash but oh so worth it. It makes a wonderful side dish for beef, chicken, pork or seafood.
Note: When writing the recipe, I didn't put amounts down for brown sugar, cinnamon and nutmeg because I just sprinkled them on to taste. Add as much or as little as you want. Add more butter if you want it to be extra rich.
- 1 butternut squash
- 1 acorn squash
- 2-3 tbsp butter
- Sprinkle of brown sugar
- Sprinkle of cinnamon
- Sprinkle of nutmeg

Acorn Squash
Preheat the oven to 350 degrees. Slice each squash lengthwise in half. Scrape out the seeds and rinse. Spread a little butter all over each half of the squash. Sprinkle with brown sugar, cinnamon and nutmeg. In a deep baking dish, add enough water to cover the bottom of the dish. Place the squash facing up in the dish. Cover with tin foil and bake for 30-40 minutes or until fork tender. Take off the tin foil and turn the oven to broil so you can brown the tops of each squash - watch carefully so it doesn't burn. You can slice into chunks or scoop out the flesh and eat it like mashed potatoes - whatever suits your fancy. Enjoy.





OOOHHHhhhh....I love squash this way, it's my absolute favorite! Have you ever tried an acorn squash ravioli? I did this for the first time last fall and almost died it was so yummy. Great pictures too, my mouth is watering!

Extra rich for me please! :) We don't usually cook squash that way here in this country but there's always a first time for everything-- especially when it looks that good!

Boy, your guests sure are lucky to have such great food prepared for them! I bet these smelled and tasted terrific! I'm surprised they only take 30-40 minutes to bake, they are so firm when raw! Now I'm craving baked squash! YUM!

Golly, I have been cooking winter squash (all varieties) this way for over 50 years now.
I didn't know that it had become so "chic".
But if so, I am pleased.

I make my winter squash this way, too, although sometimes I replace the brown sugar with maple syrup and throw in a handful of chopped walnuts. I figure the nuts are extra nutrition that no one notices! Acorn squash is on tonight's menu here. I'm glad to see that I'm not the only one who had trouble translating "some" or "a small handful" or a "good shake" into a real recipe. When I had to go away on emergency 2 winters ago for 3 days, my sons were screaming that their sisters were incompetent to even heat up the meals I had put in the oven, and the sisters were screaming that it was my fault because I cook by handfuls and shakes!
Hey! I am a new (and obsessed) reader! I noticed that you use sea salt for most recipes. Do you also substitute this for your table salt? Just wondering if you can use for whatever. Just bought some at the store today and can't WAIT to try some of these delicious looking recipes!!!
I've never cooked with acorn or butternut squash, but have already put them on my to do list for this fall. Now that I see them like this, I can't wait!

I'm teaching myself to like squash because as a kid, we never had it. We now live in a climate which sells squash all the time in the grocery store, and even today, there is a crockpot going at home with Acorn Squash in it for a Harvest Stew. These pictures look wonderful, and what's not to like with butter and brown sugar!

Made this tonight...it was GREAT! The wife loved it, the little one (20 months old) loved it and I loved it. I had to go way longer than 40 mts to bake it however. Didn't record it exactly but would guess at least an hour.
Great idea for vegetarian, I must try this in one form or another.
