Baked Potato Soup

- 4-5 baking potatoes (about 2 1/2 pounds)
- 2/3 cup all purpose flour
- 6 cups of 2% reduced fat milk
- 3/4 cup reduced fat extra sharp cheddar cheese, divided
- Salt and fresh cracked pepper to taste
- 1 cup reduced fat sour cream (I used non fat)
- 1/2 cup green onions, chopped
Preheat the oven to 400 degrees. Pierce the potatoes with a fork; bake at 400 degrees for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Discard skins
Lightly spoon the flour in a large Dutch oven; gradually add the milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, cheese, salt and pepper, stirring until cheese melts. Turn the heat to low. Stir in the sour cream and the green onions. Cook for 10 minutes or until thoroughly heated - DO NOT BOIL.
Toppings:
- 6 slices of bacon, cooked and crumbled
- Green onions, chopped
- Cheddar cheese, shredded
- Sour cream with chives
Ladle soup into serving bowls and top with bacon crumbles, green onion and shredded cheddar cheese. Enjoy!

I've never heard of using a baked potato in a soup before and I'm loving the idea of it! Those topping are seriously yummy too.
Me again! Nooo don't discard those potato skins! Fill each half skin with cheese and bake till crisp and bubbling!.....Sorry but I love potato skins!
I found you while surfing. I have forgotten how much I loved this soup. I rub the skins with oil and sprinkle with kosher salt before baking. I add all of them to the pot. It's my favorite part!

There is something that happens to potatoes when they are baking that simply cannot be replicated in any other way. So tasty! Maybe it is the driving off of moisture that can be replace with more tasty liquids, like stock or butter. Anyway, it is well worth the effort.

Oh. My. Word. I just made a scaled down version for my lunch, and this soup is so good, I regret not making more!! I cheated and used chicken bacon, but it's still got that crunchy texture that is so good in contrast to the creamy soup.

I cooked potato soup for the first time last night. Not having all the ingredents or time, I changed a few things. I boiled my potates in garlic, salt and pepper and drained and tossed them in chopped sweet onions that I had sauted in butter. I also put the crunched bacon in the soup and stirred in at least a cup of medium chedder cheese. Delious! My family LOVED it!
Made this tonight for dinner, my roomates and I loved it!!
