Fall is here! It was a cloudy day and we were bored so my son and I decided to bake something. My kids baked a pumpkin pie last weekend with their Grandma Fran - it was so good it made me crave pumpkin. I've seen a few recipes for pumpkin muffins and bread so I thought I would give bread a try. I wanted it to be spicy and full of flavor like a pie so I added cloves, nutmeg, ginger and cinnamon. I used extra pumpkin puree because I wanted a lot of pumpkin flavor and I also added walnuts for a great crunch. It turned out so moist and delicious. My kids LOVED it, they both had two pieces and asked if they could have it for dessert after dinner.
- 1 15 oz can pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/3 cups of white sugar
- 1 1/2 cups + 1 tbsp of flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/4 tsp ground ginger
- 1 cup walnut pieces

Preheat the oven to 350 degrees. Grease and flour a 9x5 inch loaf pan. In a large bowl, mix together the pumpkin, oil, eggs, and sugar. Combine the flour, salt, baking soda, baking powder, cinnamon, nutmeg, cloves and ginger; stir into the pumpkin mixture until well combined, add walnuts and mix. Pour the batter into the greased loaf pan. Bake in the oven for 55-65 minutes or until a tester comes out clean when inserted into the center of the loaf. Enjoy.

This bread is perfectly wonderful plain but it's even better slathered with a little bit of butter. It's absolutely irresistible.

I love pumpkin bread. I make it every year for our neighbors and friends. My in-laws go crazy over it, so I'm baking like nine loaves for all of them this year!

Those are my favorite spices... cloves, nutmeg, & ginger. I try to sneak them whenever I can. Love the texture of the pumpkin bread.

I simply love pumpkin bread, I make some every year. I don't use nuts instead i replace them with chocolate chips.

I've never made pumpkin bread, but I love anything with pumpkins. Being a novice baker who's just recently been discovering that baking isn't really that complicated, I'm very keen on new simple recipes that will boost my baking confidence a bit more. I haven't bought any pumpkins this year yet, but I will and this is now on the top of my "to make" list!
This looks like a great recipe! I love walnuts in bread.For something different I bet dried cranberries would also be yummy!
This looks really yummy. I bet it tastes just as good- the crunchy nuts amidst the softness of the bread....oooh!!! It's perfect for a guilt-free breakfast too!

Hm, mine did not completely rise... I left it in for 65 minutes but at the bottom there is an unrisen doughy/dense layer. Any tips? Thanks!!!!

I am so sorry, I am not sure what happened.
I live in Oregon and we are nearly at sea level...are you in a higher altitude? Different altitudes can effect baking.

I made this and it turned out great, despite my adding/substituting a bunch of things. I kept all of your proportions but I added a shredded apple, bittersweet chocolate, and unsweetened coconut (weird, I know, but I'm on this "I must use up everything in my cupboard" kick) and I substituted olive oil and half wheat flour, and it still turned out delicious. Thanks for the recipe!
I'm late to the party, but I wanted to let you know that I made this last night. I made some very very minor adjustments to the recipe due to a lack of nutmeg in my cabinet. I also added a 1/2 teaspoon of vanilla. It was just fabulous. I can't keep my husband's hands off of it :D Thanks for sharing!

Hi, Loved your recipe and tried it, but it did not rise well or completely. I kept it in the oven for 65 mins. Any thought on what would be the problem? I substituted oil with butter..would that have caused it? Planning on trying it again with with a little longer time, say 5-8 mins more. But it tasted just great..my son loved it. Thank you for sharing your recipe

I live at sea level so my baking time may differ from yours. I am sorry it didn't work out the first time, I hope it works for you next time.

There is something wrong with this recipe. There is too much liquid or something. When I cooked it, there was still a thick, dense layer of gooey mush in the bottom/middle. I cooked it longer but the outside got burned. It's not an altitude issue, I live in Texas.
I've cooked pumpkin bread before and it came out just fine, but I lost my original recipe so I can't compare it.
But yeah I think it's too much liquid or not enough flour or something.
Oh wow. That was my goof. I went back and looked, I only put one cup of flour in it. Plus that extra tablespoon. I completely forgot the extra 1/2 cup. Oh well. I'll try again.
Try some cream cheese spreaded on a slice, oh my is it wonderful. I used to make this bread with my mother during the holidays. Was looking for the recipe as I lost it a few years ago. Thanks for the help and Happy Holidays everyone.

I just made this and had a slice...ok 2 slices with some coffee....this recipe is a keeper, I could not find the one I used to use. I used chocolate chips in place of the nuts....thanks for this recipe!
This is very good i have never had a pumpkin bread before, it almost looks like a spice bun.
