Shredded Beef Taco Salad

Shredded Beef:
- 1 1/2 lbs of round roast (chuck roast is flavorful but isn't as lean)
- 1 7 oz can of whole green chiles reserve the juice
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp dried oregano
- 2-3 cloves of chopped garlic
- 1-2 cups of beef broth
Preheat oven to 275 degrees. Heat olive oil in a Dutch oven (or baking dish). Combine seasonings and rub onto the meat thoroughly. Sear the meat in the olive oil on all sides. Spread the green chiles over the roast. Add beef broth, reserved green chile juice and chopped garlic. Cover pan and place in oven. Cook 4-5 hours until shreds easily. Check on roast every couple of hours to make sure there is plenty of liquid... if it's low add more broth. You can also cook this dish on the stove top or in a crock-pot. Shred the meat and mix into the remaining liquid. Taste and re season if necessary.
Flour Tortilla Bowls:
- 4 flour tortillas (I use low fat)
- Olive oil cooking spray
Preheat the oven to 350 degrees. Coat the ovenproof tortilla bowl. You can also use an oven safe bowl turned upside down and drape the tortilla over it. Spray the tortilla with olive oil cooking spray. Bake the tortillas for 10-15 minutes or until golden brown and crisp. Let cool slightly.
Salad Toppings:
- Shredded Beef
- Black beans, drained and rinsed
- Romaine lettuce, chopped finely
- Cherry (or Roma) tomatoes, diced
- 1/2 sweet yellow onion, diced OR green onions, chopped
- Black olives, sliced
- Cheddar cheese, shredded; (cotija cheese works great too)
- Guacamole
- Mom's salsa
- Sour cream (I use low fat)






Holy Guacamole this salad looks good! I am a Mexican food girl all the way! I could eat it for breakfast lunch and dinner everyday!

I love the idea of layering ingredients, it works well for cuisines from all over the world, I just did an Indian-inspired rice pilaf where I layered everything- yours looks really fab by the way! That creamy avocado atop the colorful veggies is simply marvellous!

We are not big taco salad peeps on the east coast, as you know, and we only eat guac in the summer, it's a seasonal thing, I guess.
BUT....I had a whole avocado for lunch w/ kosher salt & cottage cheese on the side (the weirdest lunch ever, but SO GOOD!) yesterday.

When I make tacos for the rest of the horde, I always eat mine as salads. I don't, however, have the fancy pan that makes those adorable little bowls you used. Hmm, another cute thing I need!
I love all your little serving dishes - it makes the food all look so lovely. I too would much rather eat a taco salad than a taco, so will be looking for one of those pans!
This looks awesome. I see it everywhere but never order it or look to make it. But you've made it look extra good because I like what you do to the beef. THIS I would totally go for. We just ate Mexican last night. We have to have it at least weekly at our little authentic place in town.

I bought my tortilla baking bowl at a Kitchen Kaboodle here in the States. I am sure you can find one at any kitchen gadget store.
The roasted chicken is amazing and it will fit perfectly in your cool Japanese oven. :)

i have some of those taco-bowl-making pans, and they were one of the best gifts i've ever received. i use them all the time--there's just something about the bowl shape that makes a tortilla taste better. :)

Wow, this has inspired me to break out the taco shall pans I bought at amazon.com (http://www.amazon.com/Chicago-Metallic-Gourmetware-Nonstick-Tortilla/dp/B00004R90Y) a year ago but never used.
Love your blog! I grew up in El Paso, Texas and developed an early love for Mexican food. I have an easier method to make shredded Mexican beef that I think you'll enjow:
2 lbs. London Broil
1 pkg. Taco Seasoning mix
1 cup chopped onion
1 tablespoon white vinegar
1 can (small) chopped green chilis
Spray crockpot with nonstick spray. Place meat in crockpot. Pour all ingredients on top of meat. Cook on high for 1 hour to heat up, then cook on low all day.
Shred with fork in crock before serving.
This is a real timesaver and tastes GREAT!
