Oatmeal Cookies with Cinnamon Chips and Walnuts

- 1/2 cup of butter, softened
- 1/2 cup of packed brown sugar
- 1/6 cup of white sugar (or 2 tbsp and 1 1/2 tsp)
- 1 egg
- 3/4 tsp vanilla extract
- 3/4 cups of flour
- 1/2 tsp backing soda
- Dash of nutmeg
- 1 1/4 cup of quick cooking oats
- 3/4 cup of cinnamon chips
- 3/4 cups of walnut pieces
Preheat oven to 350 degrees. Beat butter, brown sugar and granulated sugar in a bowl until creamy. Add egg and vanilla; beat well. Combine flour, baking soda and nutmeg; add to butter mixture, beating well. Stir in oats, cinnamon chips and walnut pieces.
Drop by heaping teaspoons onto an ungreased cookie sheet. Bake 10-12 minutes or until lightly browned. Cool cookies on a wire rack.

I have never seen those chips before but will be on the hunt. How about combining chocolate chips and cinnamon chips - oh yeah, I've got to find those...

These sound great, but I haven't seen cinnamon chips either. What exactly are they, please? Are they literally chips of cinnamon stick (doubt it??) or is it a chipped cinnamon mixture? Would love to find out.....Fiona

ohhh. i've been wanting to try cinnamon chips for awhile, too. i was thinking about putting them in a snickerdoodle type cookie. these look lovely - i love the walnuts!

I wasn't sure what they were either. They are Hershey's Cinnamon Chips. They look just like chocolate chips but they taste like cinnamon. They are really tasty!
These really look great and I will keep an eye out at the store for them or do what Cheryl did and go to the hersheys web site..

I have only been able to find the mini cinnamon chips - and then in a little off the wall store. Were these chewy or crispy?

Yes, you can use ground cinnamon. Start with a 1/2 teaspoon, mix thouroughly then taste. Add more if you like a stronger cinnamon flavor.
