Butterscotch Chocolate Chip Cookies

We were craving some cookies so I started looking on the web for some recipe ideas. I found this recipe from Martha Stewart and decided to give it a try. I was concerned when I finished making the batter because it seemed very thin to me, but I went ahead and put the dough on the cookie sheet and popped them in the oven. When I pulled my baking sheet out of the oven it was ONE large square cookie. Buttery, thin and tasty, but ONE cookie. I cut it into squares and decided to try again. This time I added a bit more flour (about 1/4 cup) to thicken it up and then spooned VERY small amounts of dough onto the cookie sheet. They came out very thin, buttery and tasty. I really liked the butterscotch and chocolate combination.
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp of salt
  • 2 1/2 sticks of butter, room temperature
  • 1 cup sugar
  • 3/4 cup of brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup butterscotch chips
  • 1 cup semisweet chocolate chips

Preheat oven to 350 degrees. Line two baking sheets with parchment paper, and set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars until light and fluffy, about three minutes. Add eggs and vanilla; beat until well combined. Add the flour mixture all at once, and beat until just combined. Stir in chips.

Drop tablespoons of batter onto prepared baking sheets, two inches apart.

Bake until golden brown, about 12 minutes. Transfer to a wire rack to cool on baking sheet, one minute, then transfer cookies to rack to cool slightly.

Repeat until all batter has been used. Serve with a glass of ice cold milk and enjoy.

    They look wonderful. Looking at the before and after pictures, I can't believe they spread out that much during baking. I've never had a butterscotch and chocolate cookie, I would love to try this.

     

    Oh, Martha. If I were you I'd go over to the mansion and kick her ash. You'd totally rock more at the recipes (uh, I don't know your crafting prowess, lol) than her. Sigh. And I was going to try one of her website recipes while all my cookbooks are at the other end of the world!

     

    I often have to add more flour to Martha's cookie recipes. Sounds like a great combination!

    The cookies look great. I have to say, I have NEVER had good luck with Martha Stewart recipes. The best results I have ever gotten were mediocre, some have been downright disasters (I chestnut cake I once made for a bf's birthday comes to mind. We took one bite and threw it in the trash -- and it was A LOT of work. Msrtha's great for crafts ad decorating, not food, in my opinion.

     

    I love butterscotch. I think I should wait until most of the kids go back to school so I don't have to make 300 cookies or thereabouts!

     

    I recognize this cookie! I meant to email you and let you know it was the BEST cookie I have ever eaten, seriously, I loved that it was thin and crisp!

    Your cookies look yummy, but as a rule of thumb, I have never had good luck with any of Martha's recipes. I love her, but just not her recipes. I own one cookbook of hers, a gift, tried several different recipes, gave up, same for hers posted.

     

    I could really go for one of these with milk.

    oh, how i adore butterscotch chips. i don't care at all that they really taste nothing like butterscotch--they're addictive, and so are these cookies. :)

     

    I can't get butterscotchships very easily over here - although I can order on the web - may well have to make an order

    Either way you did a fabulous Job but I wonder if Martha uses a different flour, in Japan for example, we have an all purpose (hard/soft) and then there is a cookie/cake flour... I bet she uses her OWN brand but then the recipe is not as universal... she is fab... and well so are you!

    I've looked all over creation and can't find the cinnamon chips. I'll try Whole Foods. Maybe they have them.

    Those look yummy. I am usually a fan of thick, soft cookies, but this one looks like it would be perfect to dunk in some coffee, then wash down with a huge, freezing glass of milk. Stomach is grumbling, let's see if we have those ingredients........
