Orzo with Mushrooms, Peas and Parmesan

Whenever it's cold outside, I start craving comfort food. I roasted a lemon and basil chicken for dinner. I decided to serve it with orzo, mushrooms and peas. This was a simple yet comforting side dish. The mushrooms, shallots and peas gave a wonderful flavor and texture to the pasta while the Parmesan made it creamy and salty. My kids loved this pasta dish and so did my husband and I. It paired very nicely with the roast chicken and some crusty bread.
  • 1 tsp olive oil
  • 1 small shallot, chopped finely
  • 7-8 white button mushrooms, sliced
  • 1 clove of garlic, minced
  • 1/2 cup frozen peas, thawed
  • 1/4 cup of Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (not pictured)
  • 1 cup of orzo

Heat olive oil in a skillet over medium heat. Once hot add the shallot and mushrooms. Sauté until golden brown; add the garlic and stir frequently for 30 seconds. Remove from heat, season with sea salt to taste then set aside.

Cook pasta per instructions then drain and place back in the pot. Add the peas, mushroom mixture, Parmesan, parsley, sea salt and fresh cracked pepper to taste; mix thoroughly. Enjoy.

    Peas and mushrooms are my all-time favorite vegetarian combination! This picture makes me really want to make this for dinner tonight!

     

    I agree about the need for comfort food at this time of year - the peas really add a fresh flavour along with the pasta and parmesan - delicious!

    In reading your post it dawned on me that my children really enjoy meatless dishes. I think except for seafood they could give up "meat" especially chicken without much fuss. With that said I'm gonna give this a try but replace the peas with broccoli their fave veggie. Thanks for the recipe!

    I've never used orzo except as an accent for rice (think rice a roni, but homemade). I don't eat mushrooms, but I do like the looks of this side dish!

     

    That looks yummy, I never used to make Orzo until you turned me on to it, now I love it!

     

    Someone else said pasta rice...I agree. I've made this as just a meal many a times. Very satisfying indeed. And you paired this with a roast chicken! Wish I lived closer!!! lol

    When I was a kid, we had a dish like this on Fridays. I think it is probably much better with frozen peas though. I can't stand when canned peas get mushy. Will have to give it a try.

    I've never cooked Orzo.. I know.. shame on me = ( I wonder how difficult or easy it would be for me to find it here... The green looks so vibrant and this looks really-creamy-I-want-to-eat-this-now GOOD!

    You can't go wrong with orzo. It makes for a lovely dish each time and is easily paired with anything. Great recipe!
