Spinach with Toasted Pine Nuts

I grew up eating spinach out of a can with white vinegar... I loved it. I now only buy fresh spinach but I still love it with the zing of vinegar. I added some toasted pine nuts and a bit of lemon zest to sauteed spinach and garlic then added some red wine vinegar to top it off. It was so simple and tasted really fantastic. I loved the crunch of the pine nuts with the smooth spinach. My son didn't love it but the rest of us did - especially my daughter. I served this spinach with my Greek Chicken Thighs and they went perfectly together. It was a delicious and healthy dinner.

  • 1 large bunch of fresh baby spinach, cleaned and trimmed
  • 1 tsp olive oil
  • 1-2 cloves of garlic minced
  • Sea salt and fresh cracked pepper to taste
  • 1 tsp lemon zest
  • 1-2 tbsp toasted pine nuts
  • 2 tbsp red wine vinegar

In a small skillet over medium heat, add the pine nuts to the DRY pan. Cook for a few minutes, stirring frequently, until golden brown. Remove from the heat and set aside. In a large skillet, heat the olive oil over medium heat. Add the garlic and stir constantly for 45 seconds then add the clean spinach, sea salt and pepper to taste. Stir frequently for 1 - 2 minutes until wilted. Add the pine nuts, lemon zest and red wine vinegar then mix thoroughly. Serve immediately and enjoy.

    The spinach leaves look a bit different than ours in Indonesia.

    Here we like to cook spinach with corn as a soup, a very simple dish... only shallots, spinach, corns, water, sugar and salt (and sometimes we added a spice called "kunci" to give a special aroma, bit not a flavour).

     

    I love a great tasting spinach salad! I prefer spinach over mixed greens because it has a lot more health benefits plus it's loaded with iron!

     

    Spinach, my superfood and I am so lucky that my whole family love spinach, even my son since he was a little boy. He even love it more now as he grow older.

    This is a delicious combination - I have a similar recipe which includes chorizo and as Mary said, great flavour!

     

    change the vinegar for white wine then add fresh cream and make a delicious sauce to go with it. never used pine nuts though.

    I didn't grow up eating spinach but I've come to enjoy it. My kids? Now they love it! I think this will be a winner for them as they also love the zip vinegar adds to everything.

    I love the idea of adding the lemon zest. My Meyers lemons are now ripe, so I have plenty.

    I sauteed spinach last night too and added dried cranberries. The lemon zest would have been the perfect kicker!

    That sounds wonderful but where can I get some pine nuts? I think you gave me an idea for tonights supper. I just need some fresh spinich. I grew up eating canned spinich too and always put vinigar on it. I still add the vinigar but I prefer frozen over canned and fresh over frozen.

    I've never heard of spinach with white vinegar. My mom dumped it out of a can and heated in the microwave with butter while my dad convinced me I'd be strong like Popeye. :)

     

    I love fresh spinach when I can get it. I need to make something lighter than this. I have a difficult time resisting the temptation to make creamed spinach or spinach maria every time.

    I think I am going to use your Korean flank steak recipe for the flat iron steak I have waiting for me.

    We always had canned spinach with a little vinegar and sometimes some hard boiled egg crumbled on top.

     

    Growing up, the only time I saw spinach was on the Popeye cartoons, now I love the stuff. This sounds like a hot version of a summer salad I make - I know it tasted great, and I must give it a try.
