Stuffed Pork Chops

- 3-4 boneless thick cut pork chops
- Stuffing with seasoning, prepared per instructions
- 3 tsp olive oil (divided)
- 1/4 sweet yellow onion, diced
- 8-10 button mushrooms, sliced
- 1 clove of garlic, minced
- Sea salt and fresh cracked pepper to taste
Preheat the oven to 400 degrees. Prepare the stuffing per instructions. In a large oven safe skillet (I used my Dutch oven) heat 2 teaspoons of olive oil over medium heat. Add the onions and mushrooms and sauté until tender; add the minced garlic and stir constantly for 45 seconds. Add the mushroom mixture to the stuffing and mix gently then set aside.
Slice pockets into the pork chops by slicing horizontally in the side, and almost through to the other side. Season the pork with sea salt and fresh cracked pepper then stuff with stuffing.
In the same skillet or Dutch oven, heat the olive oil over medium high heat. Sear the pork chop on one side for 3-4 minutes until golden brown. Flip the chop and place the skillet in the oven for 9 minutes or until cooked through. Remove from the oven and let the meat rest for 3-5 minutes before serving.





Okay, now i want this with the spinach. I think I have my dinner for tomorrow night.
Never tried to make stuffed pork chops before, this is a good idea to try :)
I haven't tried stuffing a pork chop either & it looks truly delicious - think I shall have to give it a go!

I would call these pork scallops, but the idea is great, have done this before with onion and sage (homemade) stuffing. And, as noble pig pointed out, a perfect companion for the spinach.

Delicious! I normally don't like to eat pork chops as I think they are dry and tough but I love eating stuffed pork chops!

I think pork is ideal for "being stuffed". Normally pork chops are a bit on the dry side. The stuffing keeps the meat moist during the cooking process.
This stuffing is just great and the chops look marvellous.

LOL, I made stuffed pork chops for dinner last night. They didn't look as good as yours. I think I may have over stuffed them or over cooked them LOL...
But, that spinach really turned me on. Will definitely have to try your recipe. The addition of toasted pine nuts & vinegar got my mouth to puckering...

Your Currie inspired dish looks good. While I'm not a "stuffing" person your additions to it appeal to me;looove mushrooms! My children won't touch the stuffing either....think it might because it's not been homemade?

We love stuffed pork chops! It was one of my favorite dishes that my mother would make. She did hers almost like a fricassee. She also sealed the pork pocket using 2 halved toothpicks. That made for interesting eating if you didn't get both of them out;)

Yes! Easy and delicious and yours look far more cohesive than my attempts. Still, I love stuffed pork chops. Hubby is less of a fan, but thankfully he doesn't complain when I make them. I can never get enough stuffing.

My aunt was peeking through a magazine I was reading once and exclaimed, "you can stuff pork chops?!" You see, we only ever get them at the most half an inch thick, ha ha ha. If I got them thicker, I would love to do this! Looks delish! :)

Greetings from Ireland! I made this tonight and it was delicious! The only difference with mine was i made my own stuffing first from breadcrumbs, a good big dash of Herb De Provence and mixed in some grated mature cheddar cheese. Thanks very much for sharing - I love all your recipe's, its very my style. I will make sure to subscribe ;)
It is looking fab! I like pork - we have it almost as much as we have chicken, which is a lot.
