Sweet Corn with Cilantro Lime Butter and Cotija Cheese

I've been wanting to make corn with cilantro, lime and cotija cheese for a long time. I bought some sweet corn and decided to finally give it a try. I loved the flavor of the cilantro lime butter on the sweet corn and the salty cotija cheese on top. We all, guests included, loved this corn on the cob. Baking the corn was very simple with little clean up - I love that. It went really well with the Flank Steak with Chimichurri Sauce.
Cilantro Lime Butter:

- 1/2 stick unsalted butter, softened
- 1/4 cup chopped cilantro leaves, chopped finely
- 1/2 a lime, zested and juiced
- Sea salt, to taste
- 1/4 tsp cayenne pepper
- 4 ears of corn, schucked and cleaned
- Cotija cheese, grated

OMG, this looks so good. I cannot wait to try this out. I love cojita cheese and I can actually find it in the regular supermarket these days.

Wow! Ive made flavored corn butters before, but have never thought of adding cheese... YUM! This takes corn to a whole other level!

Yum!!! As a Mexican reader I must say corn with butter and cheese is a favorite of ours. And naturally, it reminds me of Nacho Libre. "And that right there, is our corn, best in the city, it's delicious!"
My gardener has the anti-cilantro gene so I don't use it in cooking. I buy some and use it for myself and love it with corn. I'm not sure why I didn't plant some so I could just walk outside and get it when I want it! Next year!
oooh, this makes me crave fresh corn like nobody's business! that butter sounds like something i could eat by the spoonful, but i'd be much less embarrassed to use it on good corn. :)

I have been making cilantro/lime butter for corn for a year or so now...everyone here loves it. I have never heard of cojita cheese...I will make an effort to look for it.
Nothing says summer like fresh corn on the cob. Oh, and watermelon!

Sometimes regular plain ol' butter just doesn't cut it with corn. Nice way to kick it up a notch!!

I bet it would be good too if you took the niblets off the cobb and made a salad with the corn, cilantro, cotija and lime.

Is there any possible alternative to cotija cheese? i love this recipe, but can't seem to find that particular cheese :(

Here is a website that features all different types of Mexican cheeses - if you can't find any of these, then a bit of finely grated parmesan would work just fine.

Great recipe! A perfect way to kick up all the corn showing up at the market these days. I am enjoying all the fresh corn and we can't get enough! I will have to give this one a try.
